From the moment we were served sole stripped entirely of its skin (before cooking) on the Dingle Peninsula of Ireland, I was convinced a fish sculpture was in my future. The most graceful and beautiful skeleton I ever saw was revealed on my plate at dinner’s end.
That was 2011; I have produced many fish sculptures since then.
